We love Dorada. I think its called Sea Bream in the UK. Royston found a Jamie Oliver recipe (I know...it wasnt from a Spanish book but its lovely)  He gets the fishmonger to gut the fish and then he puts slices of lemon inside and rubs it with oil and some sea salt before baking in the oven. If we are cooking this in Spain we bake it  ( as above) like Jamie suggested by rubbing oil on the dish and then cover the fish totally in sea salt. You have to use about a packet (very cheap in Spain) We then bake it in the oven until the salt forms a hard shell which makes a hollow noise when you tap it.

As long as the salt has formed the shell you can then tap it and take large sections of salt off without messing up the fish.  When all the salt is removed we serve.  Its outstanding and worth a go as its only around 3 euros a fish in Spain.
